For Veggie Foodies

I am 21 years old and a student at University of California, Santa Barbara. I have been a vegetarian since I was 8 years old and my whole family eats meat. Well until recently when my sister turned to the dark side. Or light side? Vegetarian must be the light side. Anyways I don't claim to be the healthiest vegetarian but I am very strict, can only cook things that are pretty easy to make, do a veggie diet on a budget, and most importantly I always eat delicious foods!

True or false?

You can combine the strong flavors of blue cheese, bbq sauce, cheddar, roasted beets, and kim chee all into one amazing meal? True! Pictures to come.

I cut some in slices and some in cubes for different uses. Serve them warm or refrigerate and serve them cold. The flesh should be fork tender but with a slight bite to it. It will have a great beet flavor and will probably have a really nice sweetness to it :)

Peel the beet using a fork to hold in place and a knife to lightly scrape off skin. If cooked enough it should come off easily in thin layers. I keep each one on the foil for easy clean up.

As for right now?

Oven roasting some beets from the farmers market to add to salads and sandwiches! Simply remove greens and stems, scrub, poke a hole or two, wrap each in tin foil, and bake at 375 for 30 min to an hour. That’s a big gap but I wrap them individually so it’s easy to check which ones are done. Bigger ones obviously take longer. When they are done let them cool for 5 to 10 minutes, the skin should be easy to scrape off lightly with a fork or knife. It can be a little messy heads up! When they are done slice them and add them to whatever. I eat them plain too though. Add some pepper and either feta or blue cheese crumbles! Pics soon.
